Always get a deposit no matter how little.
In the commercial world of arranging the buyers spend more on a lunch than on our entire budget. Most of them really don't know what we do nor why we even get paid. Its just music! "Can you do it with a machine or one of those electronic thingys?"
After you've been stiffed a few times you'll learn to get at least a third CIF (cash in front). Try for half, especially if you're packaging the production (responsible for musician's fees, studio, engineer, etc.)
